Market Stall, Food Truck and Street Food Packaging: What to Stock
A market stall or food truck has little storage and no room for mistakes. You need packaging that is quick to fill, stacks flat and covers the whole menu with as few different items as possible. This guide suggests a compact stock list from the range we sell, with sizes and case quantities from the product pages.
Keep the number of items small
Every extra size is another case to store. Pick one or two containers for the whole menu. A single food truck can often run on one kraft box size, one hot-food container and one bag size.
Boxes for hand-held food
Kraft food boxes suit burgers, wraps, loaded fries and dry food. The No5 small is 500ml, the No8 medium 1400ml and the No2 large 1500ml. For a burger there is also an extra large burger box.
Chips and fish
Fish and chips boxes come in 9 inch, 10 inch and 12 inch, in cases of 100. Add small wooden chip forks, about 8.5 cm long and 1,000 to a dispenser box, so customers can eat standing at the stall.
Hot food that travels
Aluminium foil containers with matching lids suit curries, rice, kebabs and bakes. They can go in a conventional oven but not in a microwave. Lids are sold separately, so check the lid code against the container. See our foil container guide.
Wraps and bags
A foil bag and greaseproof paper hold wraps and sandwiches. Read the kebab and wrap packaging guide for the sizes. For carrying several items, brown kraft paper carrier bags come in cases of 250.
Sauces, cutlery and serviettes
Clear hinged sauce pots (1oz, 2oz and 4oz) keep dips with the meal. Wooden forks, spoons and knives come in cases of 1,000, and serviettes in cases of 2,000 or 5,000. See the extras guide.
Drinks
If you sell drinks, buy cups and lids together (see coffee cup sizes and lids). 2-cup holders and 4-cup holders let one person carry a group order.
Print your name on it
At a busy market, your packaging is carried around and seen by other customers. Plain stock is fine to start; bespoke printing lets you add your own design later.
